High mountain tea from Taiwan is considered high quality because of the unique growing conditions that create a tea with a distinct flavor and aroma.
The high elevation of Taiwan’s tea growing regions, such as Li Shan and Da Yu Ling, creates a challenging environment for tea plants to grow in. The plants grow more slowly, which gives nutrients more time to concentrate and create a more intense flavor.
Sweeter taste is better: this is because of the high altitude temperature difference, so that tea sweetness increased, bitter taste decreased. There’s more tea pectin: mountains are cloudy and foggy, sunshine is low, and tea leaves are thicker and more pectin.
